Zucchini-Cashew Soup

I am currently doing a very gentle cleanse using the Ultimate Reset by Beachbody. I had been dying to try this program for quite sometime. Unfortunately, it is not yet available in Canada.  When my patient run out a few weeks ago, I had someone else order it for me in the states and I actually drove to buffalo to pick it up! That is commitment…haha!

Good thing is that the program has not disappointed at all.  I feel so refreshed and reset.  I have lost some weight, which was a great bonus but most importantly I feel really good inside.  Watch my week 1 and week 2 program status and review to learn more.

Another thing that I love about this program is the AMAZING FOOD! You eat a lot of fresh vegetarian and vegan meals throughout the 3 weeks of the reset. A lot of the recipes have become family favourites and the Zucchini-Cashew Soup is one of my daughter’s favourite, which I will be making more of from time to time.  Check out the recipe below and try to make it for your family.

Zucchini-Cashew Soup
(makes 4 serving)

4 oz raw cashews
6 cups water
6 zucchinis, cut into chunks
Himalayan salt (to taste)
Fresh basil

Soak cashews in 2 cups water for 1 hour. While cashews are soaking, bring 4 cups of water to a boil in a saucepan over medium heat.  Add zucchini, cook for 5-10 mins. Drain. Set aside.

Place cashews (with water), zucchini, salt (if desired), and basil in a blender or food processor, in 2 or more batches if necessary; cover with lid and a kitchen towel. Blend until smooth. Heat soup, if desired, in medium saucepan over medium heat; cook, stirring frequently, for 4-5 minutes, or until hot.  Do not boil.  Soup can also be served cold.

I put everything in my Vitamix and blended it on the soup setting. So, I didn’t have to heat the soup afterwards and it came out amazingly creamy and ready to it. If you own a vitamix, I suggest you do the same.
